Sehri (suhoor) must end by true dawn — the Fajr azan — which is the time shown. Some printed calendars list a precautionary sehri time a few minutes earlier; that is a safety margin, not a different start of the fast. Dates follow the astronomical Umm al-Qura calendar; the official start in each country depends on the moon sighting and may differ by a day. The sehri and iftar times for each date stay correct either way.
